What is a staff used for? How did Gandalf recover his | the Lord of the Rings

In The Lord of the Rings and The Hobbit, we often see Gandalf using his staff to cast spells. However, even though he loses his staff at least twice, he later ends up with one again. Where did Gandalf find these staffs? And what is a wizard's staff used for?
