I always cook chicken all the way through but stop before the bone itself can cook all the way through, because I like the marrow red in the thigh bone when I eat it. Is that dangerous?

I realize this was years ago, but there are some serious errors. For one, trichinosis from raw pork can be quite serious. It's not an intestinal parasite. It burrows through the host's body and forms quite large cysts that can damage organs significantly. I've seen an xray of a cyst in a human brain which was at least 3 in (7-8 cm) in diameter. Trichinosis is less of a public health problem since laws against feeding uncooked food waste were made, but it can still be present in rats, which pigs will catch and consume.
As for fish, raw sea fish are usually safe because there's no way to close a parasitic cycle between the fish and humans. However, fresh water fish can harbour tapeworms that cycle between fish and mammals that eat them, like bears and otters. This is common in the Great Lakes. Don't eat freshwater raw.
