I like your setup and the content with the server cases. Just one piece off advice. You have 2 x 3070 gpus running on a single pcie cable from your 1200w psu. I would recommend giving each gpu a single cable considering your psu has plenty of space for gpus. Pretty sure they are rated at 250w max per cable. Long term at full load you could melt the cable.

What fan controler are you using?
Do you use it also in the other cases ?

I am also looking into this. But I do not have the motherboards or case at the moment. Will have to do more research. I guess I will just do a few 3060, 3070 and a 2x 3080 rig and leave it at that.
