ОтветитьI make my own chili flakes from Thai chilies. I can’t buy a reasonable qty of these peppers and always have leftovers. I dry them out and blitz them coarsely in my blender. The result is much fruitier than regular crushed red pepper.
I also dry my leftover fresh herbs, too.
And try Montreal steak seasoning on grilled veggies!
Garam masala is one I will add. I use a lot of thyme as it is so versatile and adds a great taste to any meat dish or soup. Sage I find a bit disappointing, and marjoram is underwhelming oregano. I need to get ground rosemary, as the longer sprigs are less useful if not in a stew. Nutmeg and clove go great in so many things. Savory (the spice) used to be used like pepper, and I find it fun to experiment with. I like to feature a spice in my cooking until I really get familiar with its uses and flavor. Growing up I knew of the spices name, but not really much about what to do with them unless a recipe told me to do something with it.

ОтветитьNext time you make Shepherds pie, try putting a little cumin in there. Anglosphere cooking should have spices in it, and WW2 convinced us to live without.

the list is solid tho. I would add gochugaru bc it's a flavorful alternative to cayenne and black and white pepper.
white pepper for soups and dairy-based sauces and black pepper for everything.😊
Chillie powder in the UK is just cayenne pepper powder

Nice list, but I really wouldn't leave any that I use off my list to bring it down to some arbitrary number.
ОтветитьThis is a good video to discover beings I am working to cut down on my spices. I got into a bad habit of buying spices and using them once or twice and then they sit in the cabinet for years. That being said my most loved spice is either garlic powder or paprika. Garlic powder tends to go on just about everything I make in some way shape or form.
Also, cinnamon and rosemary go really really well on pork chops :)
Somehow I don't think this video is "for" me. I couldn't possibly just have these ten spices, regardless of what they are. And I use them. Definitely gotta have these, I think. (Will have to finish to be sure)
Edit: LOST me at chili powder, lmao. Never have this stuff. Smoked paprika and other stuff. 0/10. Would not use chili powder.
And I see now. I don't keep many spice mixes. I keep individual spices and "make" curry powder.
Add a pinch of cinnamon to enchilada sauce. Delish.
