you're description of maida was wrong in the first bit, she's way more badass than that. The reaper she almost killed attracted the attention of the sea dragon levithan (the game states that the reaper is the food of the dragon), you know this because 1) she stabbed it in the "neck" something pretty unique to the sea dragon, most fish don't have a neck just a head that leads into the body and 2) it's described as having tentacles, a trait unique to the dragon and the emperor. Secondly she didn't have the prawn when she was dragged into the deep, just a knife. She was probably forced to flee from the heat, making one of the sea dragons that you see one of the only creatures to fight maida and live.
Edit: I forgot some of subnautica bz's lore, but I still believe that everything I said about the first game is true. I believe that the incident that lead to her eating a reaper and living in it was a different incident to the one that destroyed their base. The degasi never had a prawn in any of the lore of the first game, but given maida's propensity for vehicles (her prawn, pushing the torgals to build a seamoth) I believe she used some of the base to construct a prawn before getting attacked again. Paul Torgal drowned trying to find his way out of the cave, and Bart returned to the island to die of the kharaa slowly. There is no reason maida couldn't have continued her exploration after the first attack unbeknownst to the torgals.

This is a plot hole, most likely due to the lead story writter left Unknown Worlds during development so they included Marge to connect Below Zero to the first game. The plot holes and inconsistencies are strong here: 1) surviving 10 years infected with Kharaa is silly, the time range of the infection is between hours and weeks, not years; 2) fan-made theories about Margerit being "stronger" than most people is silly and tried to justify a severe plot hole; 3) the most down-to-earth theory is a enzyme carrying peeper that was consumed by either Margerit or the reaper itself, either way, it was never really confirmed by the devs. Also, in the first game, Degasi's log #7 confirms they're infected and in log #9 assumes Margerit's death (not confirming it, but it's just like saying say Officer Keen or CTO Yu are not dead because they're technically "lost at sea", we know they got done in by a Reaper), their most likely outcome is they're dead. And the game never explains how she got cured, and the story of how she travelled miles and miles on a reaper's corpse through the entire void and it so happened that she had in her pocket three lts of water and a repair tool to cook the reaper's fat, AND it so happens the ghost leviathans totally ignored a gigant reaper's corpse when they're extremely aggresive to anything that enters their territory. So in short: Marge's was a great off-screen character in the first game but her appearence on the 2nd game makes 0 sense. Cheers!

I guess you could get away with Kharaa, but Torgal and Maida are actually spoken! Jesus!

Theory:Marguerite might have done something in the void
Rather than eating the reaper parts, maybe there's some fish with an immunity out further than we can go in either games, and perhaps she could have come across it. It's really just BSing to try and make sense of something that was written on 2 grams of coke and 5 hour energy+redbull, but it's still interesting to think of what might be outside of our reaches.

idea:
kara can survive cold temperatures, but cannot reproduce in these colder temperatures, this would mean that anything living in these polar regions could have the infection but not get worse over time, body temperature would definately play a role in this, however it would slow the rate the infection can take hold severely, giving an individual creatures immune system enough time to learn to fight it off, this could also be why many leviathans are immune, simply put, they are too big for the infection to reach the whole body before their immune system can learn to fight it off, as for why the precursors did not settle there, it is likely they were simply unaware the kara could be slowed down by temperature, or were too focused on curing it with the sea emperors enzymes to be willing to try re-locating her and her eggs
