ОтветитьI have learned that when a liquor is being made that the heat should be low just hot enough to make the steam that sends it through the tubes. If it is heated too hot it may still taste good but will cause people to become out of control-mean or just psychos. I have learned to detect the bad from the good so when my son brought home some white lightning I wouldn’t let him drink any until I smelled it. It turns out the guy he got it from knows how to make some great dew. (Mountain dew-the original stuff).

ОтветитьScotch eggs should not be on a list of Scottish foods. Scotch in the name does not come from Scotland, it comes from scotched which means covered because the egg is covered with sausage meat. It is reputed to have been invented by Fortnum and Mason in London.
You said Scottish macaroons are different from the French macarons, the small meringue sandwich with a creamy filling. They are also different from macaroons, which are round coconut biscuits.

ОтветитьI'd disagree with you description of Stovies being BOILED I think they're FRIED but of course everyone makes them slightly differently. My Grandfather liked what you might call DRY stovies, that's potatoes fried in an iron pan with onions and ROAST FAT, the idea is to cook the potatoes which must be good FLUFFY Tatties not waxy and onions so they stick slightly and you must scrape the bottom of the pan as THE SCRAPINGS are by far the tastiest bit and eaten with a buttered oatcake. YOU CAN'T MAKE STOVIES IN A NON STICK PAN because you have to have the onions and potato stick to get those little not burnt but brown and sticky bits. I make them this way myself but occasionally add some meat and gravy but not as much as to make it runny still quite dry. With the mince I'd have some carrots or neaps and a spoon of MEALIE too !

ОтветитьHi Ruth. Your haggis from sheep sounds very similar to our Pennsylvania Dutch scrapple with one difference scrapple is a pig parts product of similar parts. Great video

ОтветитьIt makes me sad to see the beautiful deer & then talk of venison, same with the lovely cows, but that's why I'm vegetarian. I usually have a McSweens veg haggis for Christmas dinner! I really want to make the potato pattie things on a griddle, bread doesn't agree with me but they would!

ОтветитьMy mo5hers and grandmothers oat cake where different then what you showed they would take left over oatmeal from breakfast and make small patties of them and pan fry them in butter
P.S we call oat partridge oatmeal here in the States ,grow up eating a number of this dishes because my mothers family was Scottish but aet a lot of Welsh and Irish dishes as well ❤

ОтветитьIt's debatable where deep fried Mars Bars originated from. A chip shop in my home town of Ilfracombe in Devon were selling them in the mid 1980's and at the time claimed to be the first place to do them! They even tried deep fried Cream eggs!

My wife & I spent 2 weeks driving around Scotland. We tried most of the food. My favorite for breakfast was Kippers. Haggis was OK, reminded me of Amish scrapple. Over all a fantastic trip that was very enjoyable. Even though we didn't find NESSIE
