Water boils at 100c so it's definitely boiling at 110-120.... not sure if you are asking to use superheated water or is your thermometer just off? Please clarify - Thank you.

I’ll be checking out the smaller rolling pin. I have a smallish French rolling pin. I’d like one smaller that isn’t tapered on the ends.

ОтветитьI'd be tempted to try rolling out the dough with a pasta machine (KitchenAid attachment) into sheets and then cutting in circles. You could then thin out the edges with a rolling pin if you want. Yes, I'm always looking for a quicker & easier way!
