ОтветитьBit late with the comment, but ive been making my scrambled eggs slowly for yeas I dont take them on and off the heat I just leave the gas on low also ive tried his method of mixing the eggs in the pan and seaoning after cooking and also mixing the egg in a bowl and seasoning pre cooking and then transfering mixed seasoned eggs to the pan and I dont notice any difference in the final product at the end and to be honest I prefer it without the creme fraiche I find if you cook the eggs slow enough they are creamy any way adding dairy just takes away the flavour of the creamy eggs and I used to always add milk or cream on sour cream etc but yeah plain old eggs salt and pepper, perfect.
Ответитьi've been doing this a few years now and a few tips: make sure your pot is small, if the bottom of it is too big it will cook too much of the egg too fast. i personally don't like making an egg paste so i really don't stir very much, just enough to scrape the bottom and break down the butter. in my experience the sour cream/ creme fraiche doesn't do much, you can just time it, just make sure you leave it ever so slightly undercooked at the end. chives are optional but they really bring out a fresh flavor. butter is the secret ingredient, don't skimp on it. salt at the end makes it delicious.
ОтветитьPeople who have been eating their parents hard scrambled dry ass eggs your whole life, just try this. If you don't like it then nothing wrong with that and i get it's a texture thing for some people or whatever, but just try it. If you dont like them so soft, keep trying until you get to a point you like them, even just another 30 seconds makes a huge texture difference. If you like larger pieces you mix just a little slower than he is and you can still soft scramble them just into larger curds. If you have to hard scramble them to enjoy them, then to each their own and that's perfectly fine but just try this once before you knock it solely because it's not what you're used to.

Not only is this the fastest scrambled eggs I've ever made, it's the most delicious. And it's so simple, legitimately anyone could do this. Even people that have never touched a stove could get this down with a little practice. It's that easy!
I might be having eggs every day now.

ОтветитьSorry, but too muddy and pale for my liking, this looks like it's only half finished to me and not yet "perfect".
I've only ever seen scrambled eggs that look like this at breakfast buffets in hotels for mass tourism or in fast-food restaurants, so always where everything has to go quickly, but never in my local breakfast cafes or in people's homes when I was invited.
At home the first step is that we break the eggs, put them into a separate bowl, season them with a little salt and pepper and beaten them with a fork until lightly creamy. Only in the second step do we put these beaten eggs into a cast iron pan that has been well greased with bacon rind and that has become hot by then and without any other ingredients.
Scrambled eggs made by good quality and tasty eggs have to taste good on their own, everything else just spoils it or rather should hide the poor taste of eggs bought from the discounter or supermarket.
We also fry some small pieces of raw ham, sliced mushrooms and a small chopped onion in an etxra pan, which everyone can then add over the scrambled eggs according to their own taste.
We mostly serve scrambled eggs on lightly pan-fried bread slices.
But the most important thing of all is that we only use eggs from our own chickens and never any mass produced eggs from the discounter or supermarket namely for reasons of taste. If you don't have your own chickens, you can buy good tasty eggs at the local market or from local farmers, it's worth it, and not only in my opinion only that separates good scrambled eggs from really very good ones. And yes, of course everyone should cook and eat how and what they like, and some people just don't know any better.
