How does the TSProf compare to traditional whetstones?
ОтветитьMy sharpening journey has worked its way up similar to your tier structure. I couldn’t sharpen anything freehand, so I used pull through sharpeners, which indeed are garbage, then went to lansky and a sharpmaker and started having success. Then I got an edge pro which has served me exceptionally well for over 10 years. Eventually I got good enough at freehand that I could closely match the sharpness attained with the lansky, sharpmaker and edge pro. The edge pro is still my primary sharpener for its speed and consistency.
I completely agree on the worksharp field sharpener, they are excellent. I have used one for years, and my uncle gave me another one so I keep it in my camping pack.
How would you rank the new worksharp precision adjust professional? It seems to be significantly better than the precision adjust elite
ОтветитьThe accusharp sharpener yes it takes a lot off and makes it’s own angle but for knifes that are cheap and you want a pretty sharp edge quickly the accusharp is great it makes a really sharp edge and does it fast! Just don’t use it on a good knife only the cheap gas station ones

ОтветитьGranted the Lansky is the highest quality knife sharpening system I've used, but I really like it, especially if you're on a tighter budget. It's like $60, which is half the price of the work sharp. Yes it has more limited angle adjustments and is a bit rough or simple in it's design, but I think it's a great option to get started in the world of quality stone sharpeners.

ОтветитьA thief just stole my whetstone & SharpNEasy pull thru sharpener. He left me with Speedy Sharp, so hopefully I'm OK. Whetstone excellent for fixing broken flat edge screwdrivers.

ОтветитьYou can absolutely tell the worksharp field sharpener Is your favorite due to how dirty it is ! Can't blame you been touching up all my knives on one since I got it and has even replaced my lansky . diamond abrasives are superior.

These are the two largest PROBLEMS / MISTAKES:
You could call it a design flaw, but it's easily negated with knowledge and attention to detail.
The knife is unsupported and the entire assembly flexes (perhaps throughout the process), changing the angle.
Just as a scale should be TARED with whatever container is used to hold the substance measured, so should the knife's plane define the zero degrees from which the angle is measured. As it is the compound angle of [the knife] vs [the bevel], not the bevel vs the ground or gravity.
Which one is the best for beginner...bought a 200€ magnacut knife and dont want do destroy it

Some brands have similar but different models of things that can make it difficult for the newcomer to know if they are looking at the one that was talked about. Plus if you use affiliate links you might make a tiny bit off purchases.

ОтветитьBOTH of the russians are knock offs of the Edge Pro system that's been around since the early 1980s. Ben Dale the designer and owner of Edge Pro did all the original YT videos and was just a great quiet unassuming American that designed a really good system. I've had one for almost 20 years. Not saying I don't sharpen a knife in the field with a carbide tool, but when I want a "scary sharp" edge. I sit down and use the Edge Pro. They make 2 levels. The Professional and the Apex. The minute you see these, you see where the russians got theirs!
ОтветитьI have a KME i use for my expensive EDC knives, what would you recommend for a kitchen knife set, something quick and easy to sharpen all the knives fast and efficiently and of course theyre not as important as my $400 Chris Reeves knives so im not needing to get super fancy with the edges, just a quick sharpen.

ОтветитьStrops are king. Once I put a good edge on my knives all I have to do is periodically strop the blades with a bit of compound. For carving, I strop after every use. I love your videos. 🔪🎸

ОтветитьIf you're a knife collector, what are you doing to always dull all those knives? I work in the field, and utility razor blades are what I use 90% of the time. If you don't use utility blades but use an edc knife, I still don't get how a "collector" or something like that could need to sharpen "thousands" of knives. Personally, I found this video bc I'm looking for a no bs sharpener for my kitchen knives. I don't fully understand why people collect knives. For instance, I like guns, I have many, but I'm able to customize them, dial them in, try many different kinds by shooting them in many different ways, be it, target practice, hunting, competition, training etc. I just don't see that lending over to knives. Do you get a new knife and go out in the woods for a day and throw it around and see what it can cut or something? Then need to sharpen them? Just seems odd to me. Adding to the fact that anyone I've ever met that is a knife collector/aficionado has also been a very strange and off-putting person. To each thier own I guess
ОтветитьI can say with confidence that the ceramic wheel sharpener from global make my knifes sharp enough to cut tomatoes paper thin with their weight alone. It would take alot of practice to do that with a whetstone..

ОтветитьYou forgot to mention Hapstone sharpeners. They are similar to EdgePro but much sturdier.
ОтветитьOne comment on the Tormek assuming it is you in the video you are displaying. Keeping the knife moving while sharpening prevents the smile you are talking about. If your using the Tormek "Correct" it should be in S tier for sure.

Ответитьhave two first from bottom tier (yeah, it's awful) and lansky kit which are kinda tricky to learn how to properly use and not convenient for first kit to use, but even with my hands it's better than a bottom tier sharpener kits

ОтветитьI don’t know, I had the Lansky Diamond set and eventually got the Tormek T8 and would never use the Lansky again unless my T8 broke down. Faster, way better edge, and didn’t take that much learning, just watch their Tormek videos. Of course way more expensive but if you’re into sharpening a whole wack of stuff I would highly recommend!
ОтветитьI have the worksharp angle set and the spyderco sharpmake. The sharp maker gets me a way better edge than the worksharp. Dunno if im just not using it properly but ive not been having the best result. The work sharp is also quite awkward on large kitchen knives

ОтветитьOne thing not mentioned is the convexing attachment for the TSProf Kadet. The micro convex edge I put on my PM2 in M4 lasts forever. Another great feature of the Kadet is the ability to use any stone/plate on the market, even in sequence you can mix and match: you just make the adjustment for each stone/plate individually.
