What can I use to sub the almond flour if I need it to be nut free?

I made this for family members tonight and they loved it! I used sugar free syrup, and I went by the grams on the carrots - my three 'medium' looked like way too much so I weighed it out and I'm grateful you gave the grams on that. (I made sugar free devil's food cake for ME, and it's cooling, lol) Thank you!

That looks so good. I've been trying to find a cake that seems simple enough to bake and that is a more healthy option. I was wondering if I can use oat milk instead and skip the raisins and if I can use coconut flower instead of dried coconut?

Fresh or dry coconut used for the carrot cake

I strongly suggest white mulberry powder as sugar alternative. Berrilys does them. They are great for baking and desserts. The only downside is, it doesn't dissolve in water. So they are only good for baking and you need to break the clumps before use.

Should the coconut oil be flavored or unflavored for this cake?
