Question: I've heard that to make fish sushi grade, you need to freeze it to temperatures cooler than most household freezers can get - is that not the case? I love sushi, but haven't ever made it at home because of the worries about being able to properly prep it to be safe. Are there certain indications I can see on packaging that would tell me the fish is ok to eat raw? I've heard fish often get a lot of parasites, and I know nothing about what of those are dangerous for humans.

I always mash my garlic in my plate or bowl REALLY well with a fork with a bit of salt (optional add maybe a drop or two of oil.) Spread it around on the entire plate you're going to use and then scoop it up and toss it into your sauce or stir fry right as you're ready to serve it. Reduces the bite and also when you reach the bottom of your plate you get these awesome hits of fresh garlic that aren't too overpowering. My go to for pasta dishes.

This seems like very outdated thinking. Fat is actually very good for you, at least the "healthy fats". Low fat diets are very 80s of you. Lowering carbs and sugars are generally the way to go.

Now THIS is something that I didn't expect. This "...But healthier" is something that could be a series. Creating meals that basically look the same (or better), that ALSO tastes good (or better? SOMEHOW), would be a welcomed addition to the "...But Better" series

I’m struggling with really good roasted veggies. They seem to dry out so easily and not have a lot of flavor. Any good additions you recommend? Btw loved to meet you at your Austin book signing. Still working on the perfect handmade ramen bowl for you!

I just want to give everyone general health tips! You can make easy changes like:
-switching to a diet soda/drinking more water
-walking at least 6 thousand steps(an hour of just walking while listening to music or a podcast)
-Find your calorie maintenance by looking up a maintenance calculator, then add 500 calories if you want to gain muscle, or subtract 500 if you want to lose weight, it’s the minimum required for weight loss.
-Eat clean and within your calorie limit for the week and at the end of the week you can have a cheat meal, for example a dinner or good lunch
-you want to focus more on protein intake(beef, chicken, Turkey, fish, shrimp, etc)
-Don’t remove your carbohydrates regardless what people say because this is what gives you energy
-Go for more volume food, like popcorn and carrots etc
-Egg white contain more protein than regular eggs, but less fats so do what you will.
-you can start the morning with a protein shake, or try not to eat in the morning, and wait until lunch
-Try sprints, for for all an all out run in 10-20 seconds, rest for 2 minutes, and go for 3 sets.
-Make sure to maximize your sleep, sleeping = not eating, not doing any bad habits.

Here's a trick from the vegans: add a puree of cauliflower, carrots, onion and garlic to mornay (vegans do this to outright replace the cheese, but I'm not). It bulks it out, adds colour, adds nutrients (especially handy if your pesky kids don't eat their veggies) and it even improves the flavour (imho but ymmv).

One other tip you missed here:

Plate your pasta with arugula or spinach, just a pile on the plate and toss your hot pasta on it. They're one of the densest nutrient sources and only add to the presentation and flavour, what's stopping you? Ditto for fresh herbs or microgreens on top of everything you eat: why not? It just makes it fancier, more enjoyable to eat and you'd be surprised how good they are for you (watercress is so good for you that they even consider it for space hydroponics). If you can find me a diet that says no to salad greens or herbs, I can show you a scam!

Best tip for cooking tasty chicken breast is to cut them in half or bash them out to 2cm or thinner. Keeping it thin means it cooks quicker and stays juicy. Season well both sides and pan sear with a little oil on med-high heat 5-7 mins each side. It’s a game changer.

I would add my tips here, might be useful.

Introduce as many Spices as you possibly can on your dish if you want interesting flavors. I have cooked a few meals for myself that have at least 6 to 10 different types of spices. Be creative with it, do some experiments.


Use sambal as a replacement for hot sauce. It's literally just crushed chili, garlic, shallots, white pepper, a pinch of salt to bind the sambal and a squeeze of lime. If you're craving for spiciness but afraid of the calories, just make it. The freshness and spiciness is so good, it's addictive

Have you tried potassium salt? Tastes slightly different, but the closest substitute I’ve found, and it adds potassium, which is naturally low in the majority of diets.

Vegan version of tip #1 (low-cal heavy cream):

1. Steam 1 cup cauliflower in 1 cup cashew milk until tender; add 3oz of plant butter after removing from flame/

2. Add 1 cup coconut milk and blend in a blender until smooth. Strain the remaining liquid through a mesh strainer back into the pot after rinsing it.

3. Add a large amount of black pepper, garlic powder, and red pepper flakes (optional), and some vegetable scraps along with a cup of water and steam for another 10-20mins

I one day had no oil or butter when cooking food, it was just what is called pytt-i-panna in Sweden, bit I was hungry so I took a non stick and added a bit of water, the color was a bit different but it was okay to eat, so how much oil can we skip when make food if we accept a slight difference in color and taste?

I love when people try to pronounce Worcestershire. I used to mess that up so badly. It's easy though. Try saying "woo" as if you're about to say "wool" without the L. Then add in "ster-shire". And you have "woo-ster-shire" sauce.

Breakfast/snack tip that covers apple pie cravings granted you don't have any problem with oatmeal. I eat it almost every day and it's so good. Dice an apple or pear and fry it in a non-stick pan with cinnamon, while it's frying make a bowl of oatmeal, mix in desired amount of protein powder (cinnamon bun flavour is the best but vanilla works great too). Top it with the fried fruit and add peanut or almond butter if you like it
