Thinking semi-fine spice milled pecans and dried minced onion mixed in the cream cheese.
Thighs - equilibrium cure (#1 and salt to 1.5%) after flattening, then a quick 15 minute velvetizing. Oh yeah..., I can taste them now.

We won 1st place at a grilling/smoking competition this weekend. The only thing I did was add cilantro to the cream cheese mixture.
