Typically, I see folks who know more than me recommending 5-10 minutes of resting.
I let my steak rest for 4 minutes and it's ice cold. I understand what it's for but why does my steak seem to get cold faster than everybody else's?
No thanks..... I like my steak hot, not luke warm and then cold by the time Im finishing it.

ОтветитьI love him, but he sold out, and I'm pissed at him. I think he got used and abused and almost became a parody of himself.
His early series he was just so amazing and an effortless,respectful host, but he should have gotten rid of the hangers-on bringing him down and had more self respect.
People talk of him as sober also, but he drank a lot of booze and smoked a lot of weed towards the end, apparently.
He is sorely missed.

ОтветитьSerious question. I used to subscribe to the rest theory, but now i don't. Reason being is that all those wonderful juices escape said meat when resting. So i cut it and eat it rightvaway along with those wonderful juices. Is there science around the resting theory ?
ОтветитьI used to cook the steak over coal while the fire was still burning…before anyone told me that was dumb. Tasted a lot like charcoal lighter.
ОтветитьAnother great tip which is often overlooked is when handling your steak, make sure you rub your greasy butthole REALLY well in order to bring more flavor to the meat.

ОтветитьThe problem with this is, all the best steaks I've had were at japanese steakhouses. They cut it up into strips while it's cooking on a griddle and, somehow, it's perfect every time. I go to texas roadhouse and there's a 30% chance the steak will be decent or it'll be 50% gristle. Maybe the japanese steakhouses pick better cuts. I dunno.

The only wrong way is to cook it the way you don't like it.
I love rare (yes whrn they say tgis meat is alive)
I tell the wife with the BBQ, “if your looking your not cooking”. I agree with letting the steak sit as well. Your spot on.

ОтветитьGreat tip. One more thing. Get a small resting rack to keep it off the cutting board. Wood is an insulator. The steak will keep cooking at a higher rate right on the cutting board than it would completely in the air. And it keeps the side against the cutting board from steaming as well
