I'm gonna wait until my crackers digest, then im going to chug a few rounds of warm buttermilk to absorb the coffee stains out of my guts! Then im going to do the same thing with whole cream. 3 times around warm, and i betcha my guts are good as new!

ОтветитьThat only works with pasteurized, not ultra pasteurized, milk. I did that for years until my stores started selling all ultra pasteurized. Suddenly I could no longer make yogurt, cheese, buttermilk.... Ultra pasteurized milk will not coagulate.

Instrucciones
Mide la leche en una jarra.
Agregue jugo de limón o vinagre a la leche. Revuelve para combinar. Deje reposar durante 30 minutos a temperatura ambiente hasta que la leche comience a cuajar y se vuelva ácida.
Úselo en lugar de suero de leche en la receta según lo requiera. Y si no lo usa de inmediato, guárdelo en el refrigerador hasta por 3 días.
Can we use the quick buttermilk prepration method (whole milk + lemon juice/vinegar) in Red Velvet cakes. because I have seen in many Red velvet cake recipes where they add a Tsp of vinegar and then cup of buttermilk as seperate ingredients. But in this buttermilk preparation we already added acid (vinegar) so am little confused if we can use this method of buttermilk or not in RVC. Really appreciate if you can clear out?

ОтветитьJemma, the absolute best way to make buttermilk is to add 1 cup buttermilk that you buy in the store, add it to 2 quarts of full fat milk, put in jar,( I use an old tupperware juice container, with lid) leave somewhere room temperature for up to 12 hours. When it is finished I put in a bowl and whip with electric mixer on high, until big bubbles form. about 30 seconds. Refrigerate and use or drink, which is what my husband and I do. We love it. So much better than buttermilk that we buy, which is $5.00 for 2L here in Ontario, Canada. I usually make it using two quarts at a time. We drink a lot of this. Keep cup back to use for next batch. Never have to buy buttermilk again. Each time we get it out of the fridge, we give it a good shake. It is so creamy an thick. Great for coating chicken.

ОтветитьHi, Gemma! I've got a tip (which I discovered by mistake after a couple of years of following this recipe) to make it curdle quickly: pour the lemon juice first, and then the milk (which must be room-temperature). It'll curdle almost upon contact! Cheers!
