You can beat her and other inkwell isle 1 bosses on simple first and once you get to the isle 2, get a bomber plane and then go back beat her on regular with the bomb equipped. Much easier.

extra tip: in her final phase, the UFOs are color coordinated. For the red ones, you need to NOT wait for them to fire, and you need to pass them first. for the brown ones, do the opposite and wait for them to fire the laser beam, then move. also, the brown ones are a lot rarer than the red ones. hope this helped!
