ОтветитьThank you. I just followed this recipe and it is perfect. Unless you really love heat, I’d recommend 5 Birds Eye chillis but no less than that or else you won’t get the real flavour. Holy basil is difficult to grow here in the UK, so I used regular Thai basil of which I have a bumper crop this year. Thanks Pailin.

ОтветитьThe first argument I got into with my wife was over this. She put it with chili peppers in hot oil. I thought she was trying to kill me (it was like mace or pepper spray everywhere). It is delicious, but be warned, the chili-infused oil hurts to breathe (and one’s eyes).

ОтветитьI have a Holy Basil that is called Tulsi. I use it for tea. I was told there are many varieties of Holy Basil. Can I cook with this one? In the States they don’t tell you what variety they are selling.

I'm Mini from Bali, Indonesia. Because of you I'm currently in the middle of process of opening a Thai restaurant here. I'm an Indonesian, don't have any experience of cooking other than from your channel, and now is trying many of your recipes, with trial and error 🤣 but I'm so excited!! I know I'm crazy but here I am while cooking also building and designing the restaurant myself! I'm also gonna go to a cooking academy in Thailand to take a private Thai cooking class.

ОтветитьMade your universal sauce, then made the pad cra pao, with the egg. So yummy!!! Then used the leftovers to make pad gra pao fried rice...I mean... why not? Amazing! I used korean peppers. Thanks so much. That sauce makes dinner so fast and easy.

ОтветитьYou should specify what "dark Soy-sauce" is. It is actually called "kecap manis". In Europe "dark soy sauce" is just a richer version of light soy sauce.
ОтветитьWhen she is frying the chile-garlic paste, it seems that there is not enough oil... Is that normal for Thai cooking, or is she just stingy with the grease?
I am totally ignorant of the methods of Thai cooking; I've only ever had the real thing at a Thai friend's home one time, and it was much different than what I've had in any restaurants; much more spicy... I remember feeling like I had laser-beams coming out of my eyes! They asked me if I was used to eating spicy food, and I said 'yes; I grew up with Korean people', and they basically said, 'haha, well, Thai food is a little bit more spicier than that, but here you go, don't be embarrassed if it's too hot, you can have a banana if you need it.'

Thought I’d share; I did something different tonight! Instead of white rice I used wheat noodles and omg 😋 So so good tossed with the noo noos!

ОтветитьDear Pailin, I made a batch of red curry paste, it is the best looking and tasting I have ever managed to make, and I've made a lot of them. However, it had the most bitter aftertaste, I started adding salt and in the end it aaalmost went away. full disclaimer, I had to eyeball some of it as I don't have cups. here are my measurements:
12 Spur chillis → weight small scale 17 g AFTER depit → Soaked in water for 1 hour.
1-2 small strong chilils. → Left out for now
coarse salt 5 grams → Used 6 grams
White peppercorns 3 grams → Used 3 grams
Lemon grass 2 stalks → Only use the purple part → 10 grams. → Used 10 grams -> save not purple
Galangal 5 grams → Used 5,18 grams
Cilantro root 4 grams → Used 4,4 grams around 4 stalks
Lime zest → ½ a lime → 5 grams dried then soaked.
Shallot 35 gram → regular shallots→ Used 40 gram
Thai garlic 30 gram → Used 30 grams
Shrimp paste 3 grams
Went all in to be able to scale up. Hope you can see where I went wrong.
Will be making your green curry paste next. Love your channel! ❤️
