Yes, correct, you can drive a 3-phase motor using a Capacitor like that. . . . BUT the value of the Capacitor will only be correct for one size of motor and also for only one specific speed or Power output on that motor.. . . These days, it would be better to get a VFD drive unit, which can change single-phase to 3-phase.

I use a Rotary converter.
My first one was made by Phoenix.
It was very noisy and could barely start my direct drive machine.
I now use a converter made by Kay industry.
Not only does it start my machine in 2 seconds or less it’s incredibly quiet.
Phase master check it out.

Thank you for your nice video. Additionally, DPS is very good item for running 3 phase motor from single phase. DPS is Digital Phase Converter.

What is the capacitor value of 3 phase 7.5 HP motor plug into single

The capacitor method works on both wye and delta. I have done it often but I use a start cap and a run cap and switch out the start cap after the motor is up to speed. Like you I used the 70uf per kilowatt formula for the start capacitor value and the run capacitor value is sized to about 20% of the start cap value.
