The first boss will spawn after you get past 200 health if I remember correctly. No need summon it yourself. You also compare the dragons between each other when the other is larger size which means its stronger, but your own playstyle determines the dragon to use as you might have noticed they each have their own buffs.

Got a feeling he misused a lot of these dragons... Bee and jungle are obviously summoner builds.. forest is starter, rock n underworld are likely melee, holy n corruption are more supports.. thats my take anyways

(hence why it appeared he mostly ran underworld, as he was only focusing on the melee baton)

and he seemed to have forgotten bout ice and ocean... and probably desert. I dont do pc so I wouldn't know which ones are made right now.

There is also a mod that would allow you to use all of the dragons at once, it's a bit of a challenge to get everything, but is worth it. Too Many Accessories mod

A surprising fun fact with these dragons: They all love fitting into a class and sticking to it, as buffing a particular class with accessories will buff their damage with it (hence the batons). The reason I bring this up is the jungle dragon's feathers will actually detect a hostile enemy and home in on it through blocks (not 100% fully how the sentry works for its tracking, but it does deal some decent damage) and can do well against smaller bosses like Twins or even cultist. The drawback is ofc summoner lacking defense and if you're not a fan of whips or wanting to use them, it'll fall off in the long run.

One dragon not gone over that I feel needs tlc is the ice dragon. It's a mage favored reindeer style dragon that basically mimics icicle crash from pokemon as a sentry attack, while you can shoot lil icicles at targets for some extra damage.

The other dragons all do some really neat effects or have good damage/supportive abilities, but while holy is a wip, and corruption's clears debuffs, crimson's has a neat lifesteal mechanic and ocean feels like a one stop exploring dragon for general purpose and OOA.

Most mods like this are pretty lazy, but I like how you can see the effort and creativity in the textures and bosses.

i feel like the dragons were just supposed to serve as "cooler" accessories and not like full-blown weapons seeing as they gave range, melee, summon buffs, etc.
