ОтветитьDr grundy says that putting milk in your coffee prevents the polyphenols from being absorbed, because the fats and proteins in the milk encase the polyphenols. But I wonder: isn't the protein and fat broken down and digested as it would normally be, thus releasing the polyphenols themselves to be absorbed also. Anybody know how that works out. But great informative podcasts always.

Dr Gundry no doubt is full of amazing knowledge on peoples health and talks about the benefits of consuming coffee- coffee with certain conditions. So, here we go again. ОтветитьWe had great difficulties avoiding certain foods when we were starting to improve our eating habits.
It was difficult going past the bananas and not buying any, similarly with bread.
One item that I found helpful are.
Lentil ‘cakes’ made by Kallo. They resemble rice cakes, but only contain lentils.
There’s 4g of carbs in each cake and 0.1g of sugar,1.8g of protein and no salt.
I probably have only one at a time and spread plenty of marmite, a moderate size piece of Cheddar cheese, and a moderate amount of goat’s butter on top. I cut it into four pieces, and it’s an excellent alternative to a sandwich.
Now I don’t even notice the bread and the bananas as I walk around the Supermarket…!!
They aren’t on my shopping list….

You answered many issues and questions I had (polyphenols in light roast, LDL(serum) effect).
For anybody else here, please keep in mind that blood tests measure acute levels of something which is in the blood right now! It doesn’t say what the body is doing with the compounds actually (like detox, burn, transport, whatever smart things it is doing). ❤
DR Gundry, can I add almond milk to my coffee instead?
ОтветитьWhile I agree with what you say. I have to disagree about getting no benefits so 0% benefit if you use cream & sugar so I belive you still get a benefit maybe just at a lower %. My dad drank coffee & mostly instant 24/7 his whole life & just missed 97. I always look for people or applications I've known for years to compare as a comparison to what is said. Keep up the good work!

To the contrary Dr. Gundry, I believe it is possible to make a separate batch of LIGHT coffee and then a separate batch of DARK coffee and then MIX them both together.... Therefore, creating a Polyphenol RICH coffee with a BOLDER flavor for a more enjoyable coffee for people who like a richer coffee?????.. and you had said it is ok to add Coconut Milk for a creamier taste without losing such antioxidants... So if this is all true, I will do this for a better tasting coffee with health benefits.

1. What about green coffee, not roasted at all? More polyphenols than light roasted? Why roast at all?
2. If boiling coffee would bring more polyphenols, why go around it - what's the problem, just suggest to boil it. So, could I boil it without any side effects? Wasn't much clear.
3. Why are not the coffee grounds eaten in the end? Maximum polyphenols richness, no?
