so do you have to leave the crops there after they're fully mature or can they only get giant while still growing?

I discovered it by accident and I almost had a heart attack when I saw a giant pumpkin XD

If its just the top left that matters, can you keep replanting and cycling the other 8 like normal? Like if all 9 grow, and you harvest all but the top left, as long as you replant them it will work? Like if the others are only half grown or something.

If so, it's probably a really good strategy to just leave one or two strategic crops and cycle the rest of the field like normal!

Insufficient information. If I plant a 4x4 field. What are my odds? There are 4 possibilities for the giant crop so I get a chance of 4x1%=4% per night? And for 5x5 I have a 9% chance? Or is it in both cases still 1%, because only the top left crop of any cluster is checked?

When I have nine fully grown pumpkins, do I need to keep watering them for a chance to get a huge pumpkin or do I just leave them and hope for the best until the 28:th?

What people forget: Overlapping is valid. That means that in a 4×4 grid, you have 4 places where a giant crop can grow. That quadruples your chances. In a 16×10 field for example, you have 112 possible spots for one to grow. You can calculate that by (X-2)×(Y-2), where X and Y is your field width and height.

Do you have to continue to water it after you get a giant crop or is it basically a decoration at that point?
