He was absolutely right; temping proteins that are that thin I always trust experience over a thermometer. That is not the case for other items but you have to use you sense one that. Sight, smell, sound, touch, even your hearing are so important in the kitchen.

MY - If you are done way before the deadline is approaching, it's a bad sign.
Moreover the meatballs were pre-cooked, it does take away some of the flavor and let's them be a bit soggy as opposed to fresh ones.
The tomato sauce didn't help either. it was just a traditional dish. no innovations.
