My family has been doing it this way for over 90 years maybe more , no one ever got sick , my only suggestion would be to cover the jars with towels and or blankets until the next morning , this will keep the heat in the jars for a prolonged time to ensure all bad bacteria is killed , just posted a video on canning tomatoes myself . cant beat home canned tomato sauce...!!!

ОтветитьUnbelievable I just did mine yesterday 10 jars of toms - all like this without a water bath or pressure cooker.
I dont get what the need for a pressure cooker or waterbath is if you heat up the toms to a boil and can straight away into clean jars and put the lids on!
Hi Jamie,I’ve seen a recipe for salsa that had chopped onions in it. They cooked on stove for an hour then put in hot jars then flipped for 5 minutes. This gal had been doing salsa for 20 years. What do you think? Especially with the onions

ОтветитьI always thought you needed to put your jars into a boiling water bath to completely seal the jars. I guess not. Anyone else do this prior to the method in this video?

ОтветитьA friend does it this way but she puts dried oregano, fresh parsley and in hers. It’s never gone off & tastes delicious.
She also wipes the top of the jars with vinegar to sterilise the top of the jar before putting the lids on.
I've been considering water bath canning. Have no experience whatsoever! You mean I don't need any expensive equipment to do this. Talk about budget-friendly! I am blown away. What is the proper term for this type of canning? Thank you for making this video.

ОтветитьIs putting the jars in the 250 deg. oven a sterile step? I took mine out of the dishwasher that has sanitize setting, and filled them with the hot tomato mix.
Anything wrong with this method? If so, do I restart at some stage? No canner available.

ОтветитьWe do this with stewed fruit. Cook the fruit, have it scalding hot, ladle into sterile, hot jars.
Fill the jars real full. Wipe rims, whack the lids on, tip them upside down for 5mins. We use recycled jam/pickles etc jars. (Just make sure the lids don’t smell of pickles/olives/onions. ...it doesn’t mix well with stewed apricots!)

I sure love the simplicity of this, however, I wonder if it's an approved canning method? We know things now we didn't know back then about food safety. Just a word of caution as the video description doesn't say if it's a tested and approved method. I am going to do further research to find out. I sure hope so!🤞
