I bet if he was to call this an original, revolutionary, one of a kind American recipe that no one has ever thought of before, you Italians would be saying this is pretty much Cacio e Pepe and filing for plagiarism and cultural appropriation.

we don't use fat for cacio e peppe. It's not the same meal with oil and butter

ОтветитьThis is just perfect for a low cost but healthy meal. A nice arugula as a side dish will make for an extra fresh and authentic italian meal.
ОтветитьI tried to do that with penna pasta and parmesan instead of peco ramono. It was not too bad. Spaghetti makes the dish easier to prepare. Some people only use 4 ingredients. Spaghetti, Peco Ramono, Pasta Water and Fresh Black Pepper .Those guys are Pros.

ОтветитьFirst attempt and I failed. I only had fettuccine at my house and when I attempted to cook in the pan it ended up to starchy and got gooey. I added more water, but the damage seemed to be done and my noodles were gooey and sticky.

ОтветитьThis is NOT cacio e pepe. This is an insult to the dish. You don't need any oil or fat as the cheese has enough fat on its own, also the emulsification is done with the starchy pasta water.
