I can speak a lot, even at times super fast - yet I cannot understand when Chinese people talk. As soon as they start relaxing and talking in their normal style...I get lost...so it is just the other way round....

Although some people can learn by listening and repeating or by trying to speak immediately, others, like me, are used to reading, forming a structure in their head and then putting it into practice, that is writing ans speaking. If I don't intend to travel or work in a Chinese-speaking environment, I don't see why I should focus on speaking from day 1, while the language is a chaotic mess in my head.
In Chinese, everything is focussed on speaking, speaking, speaking, tones, speaking, tones, speaking. When I am looking for reading materials, they are either some foreign-based books from the 80s with boring bilingual pages or some really silly texts from generic novels or some old texts that would tire and bore me even in my own language.
What I did in the past and helped me acquire some fluency was to print a normal text I would read in my daily life ( not a textbook) and then to learn the structure and vocabulary with a dictionary, to make a questionnaire and try to explain the text to myself. I have abandonned studying for now because of life obligations, but when I start again, I will do the same. It worked much better than classes or apps for me.
Also, another thing that makes studying difficult for me is that almost all the learning ressources are made with English speakers in mind, they overexplain concepts that I don't need and they underexplain important concepts that I need.

Yes very true, learning to listen is much easier but I still cannot speak Mandarin yet. That's because I can't find opportunities or anyone to talk to.
