Well the Roman cavalry of this time was mostly auxiliary troops the majority from Gaul, so it's no surprise that they were the first to break.

The numbers of the legions that were annihilated in this battle (17th, 18th and 19th. Legion) were not given to new units. They were not reestablished in the roman army.
